🥘 Slow Cooker Fall-Apart Leg of Lamb Dinner

With Lamb-Dripping Mashed Potatoes, Sautéed Veggies, Brown Butter Reduction & Gravy Total Time: 8 hours
Active Time: ~1 hour
Serves: 4—6


🧂 Ingredients

Lamb & Base (Start at 10 AM)

  • 1 4—4.5 lb leg of lamb, fat side up\
  • 1 medium onion, thick-sliced\
  • 6 garlic cloves, smashed\
  • 1 cup chicken broth\
  • 2—3 tbsp lemon juice\
  • 1 tbsp olive oil (optional)\
  • 1 tbsp paprika\
  • 1—2 tsp salt\
  • 1 tsp black pepper\
  • 1—2 tsp rosemary (fresh sprigs or dried)

Veggies Added Later

  • 1.5 lb baby potatoes, whole and skin-on\
  • 8 oz baby bella mushrooms, whole or halved\
  • 1 medium zucchini, thick half-moons\
  • 2—3 green onions, sliced (added fresh at the end)

For the Brown Butter Reduction ONLY

(For mashed potatoes)\

  • 4—6 tbsp butter\
  • ½ cup reserved lamb liquid (distinct and measured)

For the Gravy ONLY

  • 1 cup reserved lamb liquid\
  • Option A — Roux Gravy:
    • 1 tbsp butter\
    • 1 tbsp flour\
  • Option B — Reduction Gravy:
    • 1—2 tsp cornstarch + 1 tbsp cold water (optional)

🍳 Instructions

1. Start the Lamb (10:00 AM)

  1. Place thick-sliced onion in the crockpot.\
  2. Add smashed garlic.\
  3. Add chicken broth and lemon juice.\
  4. Season lamb.\
  5. Place lamb fat side up.\
  6. Cook on LOW for 8 hours.

2. Add Veggies in Stages

  • 3:00 PM --- Add Potatoes\
  • 4:00 PM --- Add Mushrooms\
  • 5:15—5:30 PM --- Add Zucchini

3. Remove Everything at 6:00 PM

  1. Remove lamb (rest).\
  2. Remove zucchini & mushrooms (side dish).\
  3. Move potatoes to a separate pot.\
  4. Strain all remaining crock liquid.

4. Divide the Liquid Clearly

  • ½ cup → Brown Butter Reduction\
  • 1 cup → Gravy\
  • Extra liquid → optional for mash texture

🧈 5. Brown Butter Lamb Reduction (½ cup liquid)

  1. Brown 4—6 tbsp butter in a pan.\
  2. Add ½ cup lamb liquid.\
  3. Simmer 3—5 minutes.\
  4. Add to mashed potatoes.

🥔 6. Make the Mashed Potatoes

  1. Mash potatoes in their pot.\
  2. Add reduction.\
  3. Add salt, pepper, cream (optional), and green onions.

🟤 7. Make the Gravy (1 cup liquid)

Option A --- Classic Roux

  1. Melt butter.\
  2. Add flour to make roux.\
  3. Whisk in 1 cup lamb liquid.\
  4. Simmer 3—5 minutes.

Option B --- Reduction Gravy

  1. Boil 1 cup lamb liquid until reduced by half.\
  2. Add cornstarch slurry if thicker gravy desired.

🍽️ 8. Serve

  • Lamb sliced or shredded\
  • Zucchini & mushrooms as sides\
  • Mashed potatoes with reduction\
  • Gravy over everything\
  • Green onions on top
